Ray’s Cookies

Description

This is a special cookie for me. I have a cousin who was a truck driver. One day, driving over the road, he stopped at a truck stop and bought a cookie. He didn’t remember the name — he just remembered he loved it, and he wanted me to recreate it for him!

So I asked him what the ingredients were, and he rattled them off: oatmeal, pretzels, chocolate and white chips, walnuts or pecans, and raisins. He said they were soft-baked. I said, “Ok, I got you.”

I figured out my measurements, told him to come over, and he tried them and said, “Cuz, this is the cookie.”

I asked him what we should name it, and he said “The Salvatore Cookie.” I said, “Nope — it’s Ray’s Cookies.”
